Our pre-sliced hot capicollo is reddish orange in color and laced with natural muscle marbling, red pepper flakes and fennel seed.
In Italian, “capo” means head and “collo” refers to the neck – representing where the meat comes from on the pig to create Hot Capicollo. Due to the higher fat content of the shoulder muscle, Hot Capicollo has a tender texture and exquisite mouthfeel that give it its tantalizing qualities. It features select cuts of lean pork that are cooked and marinated in a special brine and seasoned with authentic spices.
