Southern Italian Salami Stuffed Meatballs

Ingredients

Southern Italian Salami Stuffed Meatballs:

1/2 pound ground beef
1/2 pound ground pork
1 large egg
1/2 cup Italian-style panko breadcrumbs
1/4 cup grated Parmesan cheese plus additional for serving
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
16 slices Abruzzese Salami Charcuterie Slices
16 (1/2-inch) cubes smoked mozzarella cheese

For Serving:

2 tablespoons olive oil
2 cups marinara sauce
2 tablespoons chopped fresh basil
4 teaspoons chopped fresh oregano

Directions

Southern Italian Salami Stuffed Meatballs: Gently mix all ingredients, except salami slices and mozzarella cheese, in a bowl until just combined. Scoop 2-1/2 tablespoons meatball mixture into a ball; press 1 salami slice and 1 mozzarella cheese cube into the center, forming meatball mixture around filling to enclose. Repeat to make 15 more meatballs; refrigerate in an airtight container up to 3 days.

For serving, heat 1/2 tablespoon oil in a sauté pan over medium heat. Add 4 meatballs; cover and cook until browned and internal temperature reaches 145°F, about 10 minutes; stir in 1/2 cup marinara and cook until just heated through. Serve meatballs garnished with 1/2 tablespoon basil and 1 teaspoon oregano.
