Roasted Cauliflower Skillet Pizza
Servings: 4 to 6

1 head cauliflower, chopped into small florets
1/2 cup grated Parmesan cheese
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
1/4 tsp each salt and pepper
1 cup pizza sauce
2 oz Fiorucci Uncured Pepperoni, halved
1 cup shredded mozzarella cheese
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Preheat oven to 400°F. Toss together cauliflower florets, Parmesan, olive oil, garlic, oregano, salt and pepper. Arrange in even layer in 10- or 12-inch ovenproof skillet.
Spoon pizza sauce over top of cauliflower; top with pepperoni. Sprinkle with mozzarella. Bake for 30 to 35 minutes or until cauliflower is tender and cheese is golden brown.
Tip: Try using shredded Asiago cheese instead of the mozzarella.
