Antipasto Romaine & Radicchio Salad

Ingredients

For Serving:

1/4 cup olive oil
2 tablespoons red wine vinegar
4 cups chopped romaine lettuce
2 cups chopped radicchio
2 cups mixed greens
1 cup halved cherry tomatoes
1/2 cup diced cherry peppers
1/2 cup pitted and halved Castelvetrano olives
1/2 cup thinly sliced red onion
1 cup Pepperoni and Mozzarella Cheese Crumbles
1/4 cup chopped fresh Italian parsley
1 teaspoon fresh cracked black pepper

Directions

For serving, whisk 1 tablespoon oil and 1/2 tablespoon vinegar in a bowl; add 1 cup romaine, 1/2 cup each radicchio and mixed greens, 1/4 cup tomatoes, 2 tablespoons each cherry peppers, olives and onion. Toss salad well with tongs; serve topped with 1/4 cup crumbles, sprinkled with 1 tablespoon parsley and 1/4 teaspoon fresh cracked black pepper.
